What is regenerative butchery?

Regenerative butchery seeks the physical and ethical delight of the more conscious consumer. It produces tasty and healthy meat for humans, in organic and compassionate ways for the animal, enriching the environment.

 

Regenerative butchery offers:

 

  • More nutritious meat, organically endowed with higher levels of omega-3 fatty acids, amino acids, and antioxidants, and free from hormones, antibiotics, and pesticides.

  • More flavorful meat, with a more tender texture and intense taste.

  • Purer meat, with only salt and pepper, its natural flavor creating memorable experiences.

  • More humanely grown meat, caring for animal welfare throughout their lives until stress-free slaughter.

  • More ecological meat, through sustainable practices such as rotational grazing and planned grazing that contribute to restoring soil health, retaining carbon, and promoting biodiversity.

Just as aging wine results in a smoother and more refined flavor, aging meat produces a more tender dish with an authentic taste. Just like wine needs its maturation time to develop its true taste, texture, and color, meat needs to mature to develop its intrinsic qualities.

DRY AGING

Dry aging is a maturation technique that allows the meat's natural enzymes to break down muscle fibers, resulting in a more tender texture and a complex flavor. The aging process causes flavors to concentrate and deepen, resulting in a unique culinary experience. Aging breaks down muscle fibers, making chewing easier and the meat more palatable. Finally, aging allows juices to be distributed evenly throughout the meat, making it more appetizing.
